~Recipe of the Day~

Chili-Mac

Serves: 8
Yields: 1 cup per serving
Weight Watchers Points:
*Simple Start/Simply Filling Meal*





Ingredients:

1 lb of Ground Chicken
1.5 cups of dry whole wheat macaroni 
1 - 19 oz can of white kidney beans
1- 29 oz can of diced tomatoes
2 tsp of chili powder
1/2 green pepper
1/2 yellow pepper
2 cups of tomato juice
1 onion (diced)

Directions:

In a deep frying pan, brown ground chicken with the onion, once cooked drain fat from meat.  Add peppers, diced tomatoes, tomato juice, chili powder and bring to a boil.  Reduce heat.  Add kidney beans and macaroni.  Bring to a boil.  Reduce heat to med-low.  Cover and simmer until the macaroni is cooked.

Top with Sour Cream and Cheese for extra points.

  1. Tried this last night with turkey instead of chicken. It was so good; even my kids devoured it.

  2. Great Stephanie, glad you all loved it! I made it the other day and I have SO much leftover I have been eating it for days. The great thing is that it is also Simply Filling/Simple Start which is even better!
